What We're Eating

Sunday
Butch was in the mood for steak. It was a great day to barbecue, so we had filets, potatoes with butter and sour cream and lima beans.

Monday
Chili---I made extra, so I have two containers in the freezer.

Tuesday
Chicken tortellini with Alfredo sauce.
Salad
5 cheese bread

Wednesday
Potato cheese soup
Olive cheese muffins

Easy Potato Soup
I had some cream left from the quiche, so I put that in too. It was only about a half cup, so probably didn't make a difference. I just didn't want to throw the cream away. Also, rather than sprinkle cheese on top, I added about 1/2 lb of Velveeta when I put in the milk. I cut it in to chunks so it would melt faster. I didn't use any other of the garnishes.

Olive Cheese Muffins
I made up this name. My friend, Nancy E. gave me the recipe which wasn't really a recipe, so that's why it doesn't have a name.

Small can sliced black olives, drained
2 cups shredded cheddar
Mayonnaise
4 English Muffins, split
Mix together with enough mayonnaise to hold it together. Spread on English muffins. Bake at 300 for 20 minutes. I baked mine for 30 minutes and that was too long---but then, I have a really hot oven. Makes 8 muffins.

I was craving a Filet o' Fish from McDonalds. We've been reserving our "eating out" to Saturdays. I drove through Micky D's and couldn't believe how busy it was. I guess everyone else had the same idea.

For dinner, we just had our regular charcuterie board.

Saturday
Leftover for lunch.
