Mindy emailed me with the Pumpkin Dip recipe---in her own words:
Ingredients:
16 oz. Cream cheese (softened)
15 oz. can of pumpkin puree
2 cups powdered sugar (sifted--whatever that means)
1 tsp ground ginger
1 tsp cinnamon
combine all ingredients until smooth. serve with ginger snaps/graham
crackers/cinnamon pita chips/apples/grapes/etc.
(note: I had a hard time getting it smooth but I think it would look a
lot more appetizing if you could get it smooth.)
Mindy, had you "sifted" the powdered sugar, it would have been smooth. It tastes delicious and really doesn't look that bad. Thanks for sharing.
