Sandy's Baked Potato Soup

Sandy likes to use crock pot recipes since she's busy running kids around. This is a good one!

Sandy's Baked Potato Soup
6 lg. russet potatoes, peeled and cut into 1/2" cubes
1 lg. onion, chopped
3 (14 oz) cans chicken broth with roasted garlic (or can use plain)
1/4 cup butter
2 1/2 tsp. salt
1 1/4 tsp. pepper
1 cup heavy cream or half and half
1 cup shredded sharp cheddar
3 Tbsp. chives
sour cream
bacon, cooked and crumbled
shredded cheddar

1. Combine first 6 ingredients in crock pot.
2. Cover and cook on high for 4 hours or low for 8 hours.
3. Mash mixture to slightly thicken. Stir in cream, cheese and chives.
4. Garnish with sour cream, bacon and additional cheese before serving.
